How to Make It

Ingredients:

  • 3 tablespoons vegetable oil
  • 2 pounds of fresh and trimmed green beans
  • 1 teaspoon kosher salt
  • 1 fresh ginger piece, peeled and chopped
  • 1 Fresno chile or jalapeno chile, seeded and chopped
  • 3 chopped garlic cloves
  • 2 tablespoons fish sauce
  • 2 teaspoons sherry vinegar
  • ½ cup fresh mint
  • 2 tablespoons chopped salted, roasted peanuts or toasted sesame seeds

Instructions:

  1. Start the green beans recipe by preheating the oven to 400°F. Heat some oil in an oven-safe skillet, and add the green beans and some salt. Cook for about 10 minutes until the beans start to char in spots.
  2. Transfer the skillet to the preheated oven, roast the beans by flipping them every 10 minutes, and continue the process for about 30-40 minutes until they are tender and wilted.
  3. The last step is to add ginger, chile, and garlic to the beans and stir in some vinegar and fish sauce for a nice flavor. You can also add some seasoning or salt according to your taste. The dish is ready to be served, topped with some peanuts or sesame seeds and torn mint!
